Job Summary We are seeking a dynamic and experienced Sous Chef to join our vibrant Wolf & Mermaid culinary team at The Los Alamos National Labs (LANL). In this energetic role, you will assist the Executive Chef in overseeing daily kitchen operations, ensuring the highest standards of food quality, safety, and presentation. As a key leader in our kitchen, you will inspire and manage culinary staff, coordinate food production for various service areas including fine dining and catering events, and uphold our commitment to exceptional hospitality. Your passion for culinary excellence and team leadership will drive the success of our culinary offerings and elevate guest experiences. Responsibilities Support the Executive Chef in managing all aspects of kitchen operations, including food preparation, service, and sanitation procedures. Supervise and motivate kitchen staff to ensure efficient workflow, high-quality food production, and adherence to safety standards. Oversee inventory management and control to minimize waste, optimize stock levels, and ensure timely procurement of ingredients. Lead menu planning efforts for daily service, special events, banquets, and catering functions while maintaining consistency and creativity. Ensure compliance with food safety regulations and sanitizing procedures to maintain a clean and safe working environment. Assist in managing shift schedules, training new team members, and evaluating staff performance to foster a positive team culture. Coordinate with dietary departments to accommodate special dietary needs and ensure proper handling of all food items. Assist with food order placement and review of order when it is received. Check operations at remote cafeterias to ensure consistency with standardsn and high quality Train new kitchen members Must be familiar with frying, grilling, baking, main course prep, catering, line cook and prep cook duties Qualifications Proven experience in dining environments with strong background in food production, catering, and restaurant management. Demonstrated supervisory experience leading culinary teams with effective team management skills. Extensive knowledge of food safety standards, sanitizing procedures, inventory control, and cost management within the food industry. Skilled in menu planning, food handling, cooking techniques, and kitchen management practices. Experience with banquet service, catering operations, and shift management is highly desirable. Strong leadership abilities with excellent communication skills to motivate staff and ensure seamless kitchen operations. Familiarity with dietary requirements and the ability to adapt menus accordingly. Must be a US Citizen and able to pass a drug test. Medical cannabis use is not allowed at LANL.
