Who you are:

The Operations Manager is a key member of the team and a strategic partner in driving financial discipline, purchasing excellence, and operational efficiency. You bring a proactive, solutions-oriented mindset - identifying opportunities, improving systems, and supporting smart decision-making before challenges arise. 

You are a strategic partner to the culinary and floor leadership teams, bridging the gap between the kitchen’s creative vision and financial realities of the business. You understand that not all products are interchangeable - that generic button mushrooms can serve a stock preparation, but when a chef specifies morels for a signature dish, your job is to find the best available source for morels and source them without compromise. You bring that same intelligence and nuance to every category of spend.

You understand the balance between quality and cost, partnering closely with Culinary and Operations teams to ensure purchasing decisions support both the integrity of the menu and the health of the business. You are highly organized, analytically driven, and collaborative, with a strong sense of ownership over the tools, processes, and relationships that support the restaurant’s success. 

What you’ll do:

  • Cultivate a culture of Enlightened Hospitality for all stakeholders that supports our business objectives and growth
  • Own and actively manage Cost of Goods Sold by monitoring pricing, identifying trends, and surfacing opportunities for savings and efficiency 
  • Partner with Culinary and Operations teams to guide purchasing decisions, balancing product integrity with cost awareness 
  • Develop and maintain a clear purchasing philosophy distinguishing commodity items where substitution or volume leverage drives savings from spec-critical ingredients where the chef’s intent must be honored
  • Build and maintain vendor relationships, sourcing new partners, negotiating pricing, and ensuring consistent product quality 
  • Build and maintain a comprehensive vendor pricing matrix, a living spreadsheet that captures item-level pricing, pack sizes, lead times, and vendor contact information
  • Lead and leverage all aspects of Foodager and Bevager (Craftable) to ensure best-in-class strategy and decision-making across all Cost of Goods Sold categories
  • Lead inventory, ordering, and invoice processes to ensure accuracy, timeliness, and alignment with financial goals 
  • Collaborate with Director of Operations and cross-functionally with Supply Chain, Finance, and other teams to create ordering SOPs and support budgeting, forecasting, and operational improvements 
  • Partner with culinary leadership during menu development and seasonal transitions to access the cost implications of new ingredients, identify preferred vendors, and establish pricing benchmarks before items go live
  • Support the Facilities Manager across all facilities needs at Manhatta, helping achieve efficient and cost-controlled operations

What we need from you:

  • 2+ years of experience in operations, purchasing, or a related role (hospitality or food & beverage preferred) 
  • Strong analytical and organizational skills with the ability to translate data into actionable insights 
  • Experience managing vendors and building effective supplier relationships 
  • Familiarity with purchasing and inventory systems (Craftable or similar platforms preferred) 
  • Proficiency in Excel or Google Sheets 
  • Clear and effective communication skills with a collaborative, team-first mindset 
  • A proactive, detail-oriented approach with the ability to manage multiple priorities in a fast-paced environment
