Food & Beverage Director

Position Overview OnDeck Partners (“ODP”) is looking for a leader to run food and beverage (“F&B”) operations and strategy at Dabos Park. This role will be charged with building and executing a best-in-class ballpark experience across concession spaces, premium areas, hospitality and group locations, catering, special events, and team/staff needs. The F&B Director will oversee menu development, product sourcing, cost controls, staffing, training, game day execution, inventory management, F&B-related technology, and operational standards. The ideal candidate combines strong hospitality instincts with financial discipline, operational leadership, and a passion for creating memorable venue fan experiences. Key Responsibilities F&B Operations Lead day-to-day and event F&B operations across concessions, portable stands, bars, suites, picnic areas, premium hospitality spaces, and catered events. Ensure that all F&B locations are properly prepared, stocked, staffed, and ready for each game and event. Maintain high standards for food quality, speed of service, cleanliness, presentation, and fan interaction. Develop operational plans for high-volume games, theme nights, group events, and special ballpark events. Develop a strategy and plan to elevate premium club areas with new themes, creative menus, and added levels of service separate from day-to-day concession operation. Work with ODP and Biscuits leadership to develop and execute this hospitality strategy Partner with ODP and Biscuit leadership across ticketing, marketing, promotions, sponsorship, and operations to support the overall fan venue experience. Menu Development Build seasonal menus for concessions, hospitality areas, suites, catering, and special events. Create F&B cost-outs for menu items, including ingredient costs, portion sizes, pricing recommendations, margin targets, and waste assumptions. Introduce creative, local, and brand-relevant menu items that reflect the city of Montgomery, the Biscuits’ brand, and the fun of Minor League Baseball. Financial Management Manage F&B budgets, cost of goods sold, labor costs, inventory levels, and operating expenses. Track daily sales, per caps, product performance, waste, spoilage, and margin results. Recommend pricing, promotions, and product adjustments to improve revenue and profitability. Partner with ODP and Biscuits leadership to evaluate product mix, sales trends, fan preferences, and profitability to improve menus throughout the season and to enact special pricing for unique events when applicable. Prepare weekly, monthly, quarterly, and annual reports on F&B performance for ODP and Biscuit leadership. Maintain strong cash handling, point-of-sale, and reconciliation procedures in partnership with finance and operations teams. Work with vendors and suppliers to source quality products at competitive pricing including potential ODP-wide distributor relationships. Staffing & Training Recruit, hire, train, schedule, and lead F&B staff for concessions, kitchens, bars, hospitality areas, and event operations. Build staffing plans for game- and event-days based on expected attendance, group sales, hospitality bookings, and operational needs. Develop training standards for food safety, guest service, role-specific execution, upselling, and responsible alcohol service. Create a positive, accountable, team-first culture among full-time, part-time, seasonal, and event staff. Provide active leadership during games and events, including pre-shift meetings, in-event coaching, and post-event follow-up. Inventory, Compliance & Safety Oversee purchasing, receiving, storage, inventory counts, transfers, and control. Strong understanding and daily interaction with the point-of-sale system to ensure the ballpark is properly stocked and that inventory matches sales.
